A gin & tonic inspiration dedicated to the epic Van Morrison song.

• 2 oz Gin (preferably Empress Gin)

• .5 oz St. Germaine

• .25 oz Campari

• .25 oz Lemon Juice

• .5 oz Lime Juice

• 8-10 dashes of Fee Foam (or egg white)

Shaken (dry shake first if using egg white).

Garnish with Peychaud's and Peach Bitters on the foam. Make a pretty design.

Serve in a coupe.
